EASTER EGGS ------- Chocolate and Fruit

Ingredients

25 piece(s)

  • 100 grams hazelnuts
  • 100 grams Wheat, whole
  • 130 grams Oat, whole or oats
  • 200 grams honey
  • 100 grams Nut Butter (preferably hazelnut, but almond or peanut butter workas wel)
  • 1/2 teaspo cinnamon
  • 1 teaspo vanilla essence

  • 100g hazelnuts, ground
  • 100g Wheat, whole
  • 130g Oats, whole or oats, rolled
  • 200g honey
  • 100g Nut Butter (preferably hazelnut, but anyother will work fi-peanut wil give a distinctive taste)
  • 1/2 teaspoo Cinnamon (Ceylon)
  • 1 teaspoon Vanilla Essence or 1/2 tsp ground vanill

For chocolate eggs add

  • 2 tblsp Rum
  • 2 tblsp Strong Coffee
  • 4 tsp dark cocoa powder

For Fruit eggs add

  • 4 tblsp orange juice
  • 1 tblsp Orange rind, finely grated
  • Pinch each Nutmeg and Cardamom

To coat eggs

  • coconut, dessicated
  • Nuts, finely ground
  • Extra cocoa powder

Recipe's preparation

  1. grind Hazelnuts 6 sec/ speed 6, set aside

    toast wheat and oats 8 min/ 80*C/ speed 1

    leave to cool, then mill 1 min/ speed 9 or until very fine, set aside

     

    mix nuts, honey, nut butter, cinnamon and vanilla 20 sec/ speed 4

    - for chocolate eggs add rum, coffee and cocoa

    - for fruit eggs add orange juice, rind and spices

     

    add flour, mix 30 sec/ speed 4 or until well combined

    shape eggs

    roll chocolate eggs in cocoa powder or (fine) coconut flakes

    roll fruit eggs in ground nuts

     

    leave to dry on a cake rack for a few days, thrn wrap in aluminium foil and coloured tissue paper or cellophane

Tip

This can certainly be made for any other occasion as well, just shape balls and coat the same way. They are well received as birthday gift, without wrapping, just coated and presented in a nice box!
