  • 11 medjool dates, pitted
  • 100 g hot espresso
  • 45 g coconut oil
  • 2 tsp vanilla extract
  • 250 g hazelnuts
  • 220 g bukinis, (roasted buckwheat)
  • 60 g cacao nibs
  • 50 g Cacao, (plus extra for dusting)
  • 35 g chocolate protein powder
  • 20 whole roasted hazelnuts

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Mill hazelnuts 15 sec, speed 9, MC on. Set aside.

     

    Combine dates, espresso, coconut oil and vanilla in bowl and leave 10 mins to soak.

     

    Mix 10 sec, speed 8. Scrape down sides. Repeat two more times.

     

    Add reserved hazelnut meal, cacao and protein powder and mix 30 sec, speed 4.

     

    Add bukinis and cacao nibs and mix 30 sec, reverse, speed 3 (or until combined).

     

    Mixture will look wet and a bit crumbly, but if you press into it you will notice that it compresses together.

     

    Torn mixture out into a bowl. With hands greased with a little coconut oil, compress and roll mixture into walnut-sized balls. As you do this, make an indent in the centre of each with your thumb, add a whole hazelnut and reform the ball around the hazelnut. Roll in extra cocoa and chill to firm up.

     

    Makes about 20. Will keep in the fridge for weeks.

Tip
