  • 100 grams Coconut Flour
  • 50 grams Quinoa flakes or gluten free oats
  • 40 grams desiccated cococnut
  • 60 grams sweetner of choice
  • 2 teaspoons GF baking powder
  • 1/2 teaspoon bi carb soad
  • 3 Large Ripe Bananas
  • 165 grams coconut oil or oil of choice
  • 2 eggs
  • 10 grams Butter

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Pre heat oven at 180o.

    Add all ingrediants to the Closed lid. Mix on 6 for 6. Pour into a lined tin. (I used a square one) Cook for 1 hour or till a fork comes out clean. Let it sit for 10 before turning out.

    I then cut into little squares and freeze for lunchboxes

    This was yummy, although a little dry. I had to use 80g butter, as I didn’t have enough coconut oil, so not sure if that’s why? I’m newish to baking gf, and never seem to get it right!

    This cake was yummy. Thanks! I had a coconut flour, rice flour combo so I used this. I also added a little more butter and less oil. Thanks for posting tmrc_emoticons.)
