Hazelnut Torte

  • 120g hazelnuts
  • 60g Coconut
  • 180g sugar
  • 1 crushed wheetbix
  • 90g SR flour
  • 3 large egg whites
  • 1ts vanilla extract

Recipe's preparation

    Hazelnut Torte
  1. Make the hazelnuts into meal by milling on speed 10 for 10 secs. To crush the wheetbix add it now & press the tubo button.

    Thouroughly clean & dry the bowl & butterfly by putting a swig of vinegar & 500g water "clean" for 5 mins varoma speed 4. 

    To the clean dry bowl add the sugar & process for 10 secs speed 10. Place to one side.

    Add the egg white to the TM bowl & set the timer for 10 mins 37 degrees speed 4, slowly adding in the sugar bit by bit after 1 min.

    Add the reamining ingredients & fold through 10 secs speed 1.

    Pour into a lined springform tin & bake for 25 mins at 180 degrees. leave in the tin for 2 mins before removing & allow to cool on a cake rack.

    Serve with whipped cream or chocolate ganache from the everyday cookbook.

Tip

You could use almonds instead of hazelnuts if you prefer.

I have adapted this recipe to suit the Thermomix - it is my brother-in-law's favourite birthday cake.
