Healthy Apricot, Nut & Seeds Bliss Balls

  • 200 grams dried apricots
  • 60 grams raw almonds
  • 60 grams cashew nuts
  • 50 grams dessicated coconut
  • 30 grams sunflower seeds
  • 1 tablespoon chia seeds
  • 1 tablespoon honey
  • extra dessicated coconut for rolling

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Healthy Apricot, Nut & Seeds Bliss Balls
  1. In a separate bowl, soak dried apricots for 10 mins.

     

    Add almonds, cashew nuts, chia seeds, sunflower seeds and coconut to TM bowl. Process for 10 secs on speed 10.

     

    Drain apricots and dry gently with paper towel or a tea towel. Add apricots and honey to TM bowl. Process incrementally for 30 secs up to speed 7.

     

    Roll mixture into balls and then roll into dessicated coconut. Place in the fridge for an hour.

     

    Store in an airtight container in the fridge.

Tip

Use a flat tablespoon of mixture for each ball to ensure a consistent bite size bliss ball.

    Made these for my toddler and he LOVES them. I only had 80g of dried apricots so I added dried figs and dates to make it up to 200g of fruit. I also added about 5tsp of the 'Power and Go' chia/linseed mix from Coles.

    I took a batch to playgroup; the kids and adults ate them so fast and everyone wanted the recipe.

    This is a brilliant recipe, thank you so much!
