Heavenly Choc-Raspberry Fudge

  • 120 grams raw cashews
  • 85 grams coconut oil
  • 45 grams cacao powder
  • 100 grams honey
  • 70 grams frozen raspberries

Recipe's preparation

  1. 1.  Line a 20cm x 20cm slice pan with baking paper, leaving the paper overhanging 2 sides of the pan.

    2.  Weigh the cahews into the bowl then chop for 10 seconds speed 5.

    3.  Add the coconut oil and heat 37 degrees, 1 minute speed 2,

    4.  Add the cacao and honey then mix for 30 seconds speed 4. 

    5.  Weigh in the frozen raspberries then pulse the turbo button 2-3 times for 1 second. 

    6.  Transfer the mixture into the lined slice pan, then place the pan into the freezer for 30 minutes. 

    After 30 minutes, cut the fudge into small squares then store in the fridge.

    Heavenly is definitely the way to describe this fudge!! Had a bit of trouble with the mixture firming up too quick when I added the raspberries frozen, so they may need a slight thaw or mixture a higher temp before they are added.
