- 250 g Nice biscuits, (1 Pack)
- 1/4 tsp ginger, finely grated
- 85 g Butter, softened

- 395 g condensed milk, (1 can)
- 125 g lemon juice, (1/2 Cup)
- 1 tbsp lemon rind, finely grated

Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Recipe's preparation
Preheat oven 180deg
1: Add bisciuts and Ginger to TM 8sec/sp5. Scrape down wizz a bit more if needed to make even crumbs.
2: Add Butter 1min/rev sp
. Scrape down amd mix a little with spatula. Repeat 1min/rev sp
. Lightly mix with spatula until biscuit mix is uniform.
3: Transfer to a baking dish (200-300mm). Press firmly into dish about 5mm thick to make base and bake 15-20mins until golden.
1: Add Cream Cheese and a dolip of Condensed to TM and beat 1min/sp2
2: Set TM to 4min/sp2 and gradually add Condensed Milk, Lemon Juice and Lemon Rind alternately.
3: Beat mixture 30sec/sp3.
4: Transfer into cooled biscuit base and top with grated Nutmeg
5: Cover and refridgerate until set

Don't use Meyer or green Lemons. It won't set.
