  • zest of 1 lemon, Yellow part only
  • 300 grams sugar
  • 300 grams water
  • 150 grams lemon juice, strained
  • 40 grams cornflour, gluten free
  • 4 egg yolks

Recipe's preparation

  1. 1.  Place the lemon rind and sugar in the bowl and mill 8 sec/speed 10.


    2.  Add the water, lemon juice, cornflour and egg yolks.  Cook 7 mins/90 deg/speed 4.


    3.   Can be served warm or cold over fruit of your choice.
