  • 1 portion Lemon curd EDC
  • 120 g Rapdura Sugar, (or raw sugar)
  • 1 --- lemon, zest & juice, (remove zest with vege peeler)
  • 125 g Butter
  • 125 g plain flour
  • 2 tsp baking powder
  • 2 eggs

Recipe's preparation

  1. Preheat oven to 180C & grease ramekins or prepare patty cake cups.

    Optional - spoon 2 tbsp of lemon curd into bottom or ramekin or pipe it into the centre of the batter once they have been poured into the cups.  You will find the curd sinks to the bottom anyway. Alternatively, serve with lemon curd. 

    1. Add sugar and zest to TM bowl and mill for 15 second speed 9.

    2. Add butter, flour, baking powder, eggs and combine 10seconds speed 7.

    3. Add juice (squeeze over MC to catch the seeds), scrape down and mix 5 seconds speed 5.

    4. Divide batter between ramekins (pipe lemon curd optional) and bake for 20minutes or until skewer comes out clean.  

    Serve with EDC vanilla custard, ice cream or cream.

    Just sensational! The first time I made these in metal darioles and the curd burnt a bit on the bottoms... (after googling) I found that making them in ceramic ramekins/darioles gives a perfect result because the ceramic doesn't heat up as quickly as the metal. Anyway, they're a serious winner in our house. Highly recommended!

    There was not a crumb left in any of the ramekins, we served with ice cream and more lemon curd drizzled over the top. Will definetely make again, thank you

    Very yummy And easy. I steamed them for 30 mins so came put vey moist. Served with EDC vanilla custard and icecream. Were a hit with everyone.
