Mandarin, Blueberry and Coconut Sorbet

Ingredients

2 litre(s)

Sorbet

  • 80 g raw sugar
  • 80 g blueberries
  • 150 g Mandarin segments
  • 1 small lemon
  • 80 g coconut cream
  • 800 g ice cubes

Recipe's preparation

  1. Place sugar into mixing bowl and mill 10 sec / sp 9

  2. Add fruit including lemon, coconut cream and half of the ice and blend 25 sec / sp 10, gradually increasing from sp 1 to sp 10

  3. Add remaining ice and blend for a further 1min / sp 10, using spatuala to assist

  4. Serve straightaway or place into freezer using suitable container

Tip

I placed some of the sorbet into ice-block moulds for my daughter to snack on easily
