Base

  • 1/2 package Packet Milk Arrowroot Biscuits
  • 75 grams Butter, Melted

Filling

  • 500 grams mango, Diced
  • 500 grams cream cheese, Cubed
  • 120 grams sugar
  • 75 grams water
  • 1 tablespoon gelatine
  • 300 grams cream

Topping

  • 2 --- mangoes
  • 4 tablespoons caster sugar
  • 2 teaspoons gelatine
  • 100 grams boiled water

Recipe's preparation

    Base
  1. Place biscuits in Closed lid 10 sec/ speed 6

    Add butter and mix 10 sec/ speed 6

    press into a greased springform tin and place in freezer while making the filling

  2. Filling
  3. Place mangoes, cream cheese & sugar in Closed lid

    Mix 50 sec/ speed 7 with aid of spatula until smooth

    Mix gelatine with water and place in microwave for 30 sseconds 

    Add cream to Closed lid and mix with cream cheese mixture 30 sec/ speed 7

    Add gelatine mixture and mix a further  20 sec/ speed 7

    Pour mixture onto biscuit base and place in freezer for 30 mins

  4. Topping
  5. Place mangoes in Closed lid and purée 20 sec/ speed 5 

    Add sugar, water and gelatine and mix 30 sec/ speed 6

    pour over cheesecake and refridgate a further 2 hours

    Thanks a lot Zada123 for the basic recipe and also to the commenters for your suggestions.

    I doubled the gelatine in both the filling mix and the topping (thanks cillag, Jadeybaby81 and Nads) and also doubled the biscuit quantity (thanks ThermoDevotee) for the base and the butter used in the base. I used Granita biscuits (thanks WouldbeThermoQueen and also to my wife).

    I used to be retired but now I'm thinking of opening a cheesecake shop. Only one flavour though! tmrc_emoticons.-)

    I too had issues with the consistency. I used a little more gelatine than suggested and it was still too soft! Perhaps the type of cream used makes a difference. Really tasty however.

    Disappointed with this recipe. Missing some instructions such as how long to melt the butter before adding to the crushed biscuits. Also insufficient gelatine for the amount of mixture. Very hard to cut and collapsed when I did cut it into slices. Having said that it was very tasty.

    Absolutely love this.  Like ThermoDevotee I've made it twice,  the second time it was the token "bring a dessert" dish to a BBQ and people still rave about it.  I used Granita biscuits for the base and also dissolved the gelatine in the boiling water.  Bowen Mangoes seem to have the most flavour!

    tmrc_emoticons.) I'm a complete beginner with sweets and the Thermomix but this turned out absolutely superb. I'm making it a second time  as it was so easy and such a success. I used tinned and drained peach /mango for the middle but fresh mangos for the topping. i also used a whole pack of Nice biscuits for the base but for the second time I will add more butter to stop the base from crumbling too much.

    I thought this recipe was delicious and so did everyone else. I used a pkt of Nice biscuits for the base. Next time I would make the base a little chunkier  because I like it that way. Also I would put in a bit more gelatine in the filling to make it set a bit better. I also used tinned mango's for the filling. I will definitely make this again.

    I have made this twice now. The first time I used half a pack of arrowroot biscuits, the second time I used a whole pack because we like more base. For the cheesecake mixture I use tinned mangos and drain most of the juice ( i add maybe1/4 - 1/2 a cup worth of the juice) and for the topping I use fresh mangos. I also dissolve the gelatine in the boiling water both times before adding to the mixture. Very yummy, easy but an impressive dessert.
