  • 500 grams warm water
  • 300 grams huesillos
  • 50 grams pitted prunes
  • 250 grams chancaca
  • 100 grams sugar

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Mote
  1. Put mote in a separate bowl, add 500 gr water and let soak overnight
  2. Almíbar
  3. Put the peel of an orange and the chancaca cut in small chuncks (1 cm) and chop 30seg/vel 5 to 10 progressively.
  4. Add sugar, water and cinnamon and set 15 min/varoma/vel 2.
  5. In the meantime, cover Varoma dish with baking paper and put the hidrated mote on it. Reserve.
  6. Huesillos
  7. Add to the bowl the huesillos and prunes. Set the Varoma in position and programme 40 min/Varoma/reverse spin/Vel 1.
  8. Take the Varoma carefully and check the huesillos. They need to be very soft. If they need more time, programmme 3-5 min/100C/reverse spin/vel 1.
  9. Put the cooked mote on a separate bowl and let cool. Then store in the refrigerator.
  10. Once the husillos are cooked, put in a separate bowl in the fridge.
    Serve together with the mote and the juice once cold.

Tip

You can replace solid chancaca for liquid chancaca or golden syrup
Store separately and add mote to huesillos right before serving.
Serve cool.
