Ingredients

50 g

Passionfruit Curd

  • 6 eggs, lightly beaten
  • 165 grams sugar
  • 50 grams lemon juice
  • 220 grams passionfruit pulp
  • 180 grams Butter, unsalted

Recipe's preparation

    Passionfruit Curd
  1. Insert butterfly.

  2. Add all ingredients.

  3. Cook 12mins/80C/speed 2.5.

  4. Use steamer basket in place of MC.

  5. Pour into sterilised jars.

Tip

Makes around 800mls. Will keep in fridge 4-5 days.

    So easy, so yummy. Made this recipe twice one week after the other as I got a great deal on bags of passionfruit. Filled three sterilised Bonne Maman jars to the top. An absolute 'keeper' recipe.

    Perfect!

    I made this today, using a 170 grms of passionfruit pulp from a can and 5 fresh passionfruits. It gave me 200 grms of passionfruit. I followed the recipe for the remaining ingredients but cooked the curd for an extra minute as I wanted it super thick to fill a cake. It was absolutely perfect. Next time I may reduce the sugar slightly as I personally would prefer it to be less sweet, but that's just personal preference and the sweetness doesn't detract for the beautiful curd at all.

    This Passionfruit Curd is delicious.  I had a little bit more passionfruit so I added an extra egg and little extra lemon, I used rapadura sugar and halved the quantity of sugar.  It was sweet enough for me.

    Someone take the spoon from me!! Yum! I have used it for a cake filling. Creamy, tangy, not too sweet. I used raw sugar and passion fruit pulp from a tin.

    This is sooo delicious my 2 year old and I just finished off what wouldn't fit in the jar tmrc_emoticons.;-)I made  afew changes - I thought I had a lemon, didn't so added an extra 50grams of passionfruit. I spoke to a friend and she suggested the citrus juice might be mportant to the setting factor so I then added 50 grams of lime juice too. Tangy, creamy, sweet and delicious! I've also shared your recipe link on my facebook page, Thanks for sharing it with us all tmrc_emoticons.-)

    this is the only passionfruit curd recipe that has turned out for me. I have stood at the stove stirring, stirring, stirring and for eggy curd. why on earth didn't I use my thermomix.  tmrc_emoticons.;)
