Pina Colada Style Sorbet

Ingredients

1 litre(s)

Sorbet

  • 130 g raw sugar
  • fresh mint leaves, generous handful
  • 1 lime rind, pith removed
  • 1 lime, flesh & juice
  • 270 g coconut cream
  • 700 g frozen pineapple, cubed
  • 100 g ice cubes

Recipe's preparation

    Method
  1. 1. Add Sugar, Mint, Lime Rind to bowl and mill Speed 9/ 10 Sec.

    2. Scrape down side of bowl, add Lime and Coconut Cream and mix Speed 5/ 5 Sec.

    3. Add Frozen Pineapple and Ice Cubes, Grind Speed 10/ 90 Sec. Assist with spatula through lid, if required to push ingredients away from the side of the bowl.

Tip

Tip: For a slushy style cocktail, simply add 100ml of your beverage of choice in step 2.
