Print recipe

Quince & Rhubarb Crumble

  • 300 grams plain flour
  • 150 grams sugar
  • 100 grams Butter
  • 1 egg
  • pinch salt


  • 4 Quinces, peeled, cored and chopped
  • 250 grams Rhubarb, stems roughly chopped
  • 250 grams sugar
  • 1 teaspoon cinnamon
  • 15 grams vanilla extract
  • 40 grams water

Recipe's preparation

  1. - Preheat the oven to 180°C.


    - Lightly grease and line large spring form (22 –24 cm) with baking paper.


    - Place flour, baking powder and salt into the bowl and mix for 10 sec / speed 6


    - Add remaining crumble ingredients and mix for 6 secs / speed 6 to make crumble.


    - Transfer half of the mixture into the base of the spring form and press down firmly with the back of the spoon.


    - Set the remaining mixture aside in a separate bowl.

  3. - Place all the filling ingredients into the mixing bowl


    - Cook for 25 – 30 mins /100°C / speed 1


    - Place the filling on the top of the crumble base and top with remaining crumble.


    - Bake for approximately 40 minutes or until golden brown.


    - Remove from the oven, slightly cool down and remove from the tin.

    Well done with posting such a lovely recipe photo. It certainly inspired me to try this recipe. I was searching recipe community for a quince crumble recipe and found this. No feedback comments, but I had quince and rhubarb this was sure to be a great combination. And it was just beautiful! The quantity of baking powder to use has been missed in the ingredients list: I used 1 1/2 teaspoons. I cut the sugar in the fruit back to 150g and used gluten free flour for the crumble - and the end result was perfect for us. I served with some Thermomix natural yoghurt (see my recipe for Honey Yoghurt and Beyond - The Easy Way, and it was a perfect match. Highly recommended. This recipe is now in my KILLER RECIPE  list!
