Quinoa Cookies

Ingredients

20 portion(s)

  • 180 grams honey
  • 95 grams sugar raw
  • 120 grams Butter, - either store bought, or make your own (refer to EDC)
  • 130 grams Peanut Butter, - either store bought, or make your own (refer to EDC)
  • 0.5 teaspoon vanilla essence
  • 180 grams rice flour, - either store bought, or make your own (refer to EDC)
  • 45 grams Quinoa flakes
  • 1 teaspoon bicarbonate of soda, - also known as baking soda
  • 0.25 teaspoon salt, - optional, dependent on whether you are using salted butter/your preference
  • 0.5 cup of nuts, - optional, your preference

Recipe's preparation

  1. Preheat oven to 175 degrees Centigrade.  Line baking tray with baking paper.

  2. Cream together honey, sugar, butter, peanut butter and vanilla essence, for 1 minute/speed 3-4.

  3. In a separate bowl, combine rice flour, quinoa flakes, bicarbonate of soda, and salt.  Then add to the TMX bowl and knead for 1 minute/interval (or dough/kneading/wheat) speed.

  4. Add nuts, if desired, stirring through with spatula.

  5. Drop rounded teaspoon-sized portions, about 2 inches/5cm apart, onto the baking tray (lined with greaseproof baking paper).  Bake for 12-15 minutes or until light golden brown. 

  6. Cool for one minute before removing from baking tray to baking rack.
