      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Step 1: Place a bowl ontop of thermomix lid and weigh kombucha into it. Sprinkle gelatin onto of the kombucha and allow it to bloom (blooming rehydrates the gelatin and helps it incorporate into the raspberry better later). Set this aside.

    Step 2: Place frozen berries into thermomix bowl and heat 4 min 90 degrees speed 2.

    Step 3:Add honey (if using) and blend with berries 10 sec speed 8.

    Step 4:Scrape down bowl with spatula then add bloomed gelatin back to bowl (the kombucha gelatin mix will now be congealed and crumbly) and heat for 2min speed 37degrees speed 2.

    Step 5: Pour this mix into moulds snd set in the fridge for 2-3 hours

Tip

You can replace raspberries with any frozen fruit and you can replace kombucha with orange or apple juice. You can sieve the mixture before you put it into the moulds if you don't like seeds.
