Raw Cacao & Macadamia "cheesecake" (gluten & dairy free)

Ingredients

Base

  • 130 g raw macadamia nuts
  • 8 --- medjool dates, pitted
  • 70 g Coconut shredded or desiccated

Filling

  • 2 vanilla beans, cut into quarters
  • 170 g raw cashews
  • 330 g Avocado, chopped
  • 120 g Maple syrup pure
  • 55 g coconut oil
  • 80 g raw cacao powder
  • 1 tablespoon water

Topping

  • 150 g raw macadamia nuts
  • 150 g coconut cream
  • 30 g Maple syrup pure

  • raw macadmia nuts, roughly chopped

Recipe's preparation

    Base
  1. Lightly grease a 20cm springform tin with coconut oil

     

    Place all ingredients into bowl and gring 20sec Speed 9

  2. Filling
  3. Place vanilla beans in bowl and puree 10sec Speed 10

    Add cashews to bowl and grind 8sec Speed 10

    Add remaining ingredients and blend together 1min 30sec Speed 9, scraping down the sides halfway through

     

    Spread filling over base and freeze for at least 30mins

  4. Topping
  5. Place all topping ingredients in a clean bowl and blend 30sec Speed 9, or until smooth

     

    Spread this over the filling, smoothing the top with the spatula

     

  6. Decoration
  7. Whilst the topping is still soft, gently place extra chopped macadamia nuts around the outside of the cake.

     

    Place the springform pan in a plastic bag and freeze for at least 2 hours

Tip

This will store in the freezer for at least a week if you are not serving all at once.

I recommend taking it out after 2 hours and slicing into 16 pieces, before returning to the freezer if you would like to semi-thaw the individual slices as you would like to eat them
