Cake

  • 315 grams carrots, peeled and cut into pieces
  • 250 grams walnut pieces
  • 180 grams raisins
  • 30 grams desicated cocnut
  • 3 tablespoons sunflower seeds
  • 3 tablespoons pumpkin seeds
  • 3 tablespoons honey, agave nectar, brown rice syrup or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 level tablespoon water

Icing

  • 175 grams macadamias
  • 30 grams lemon juice, approx. one juicy lemon
  • 3 tablespoons honey, agave nectar, brown rice syrup or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon water

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

    The Cake
  1.  Place carrots and walnuts in mixing bowl and chop 2 sec/speed 5 MC on.

  2. Add remaining cake ingredients to mixing bowl and chop 5 sec/speed 5 MC on.

    Scrape down sides of mixing bowl and chop 5 sec/speed 5 MC on.

    Don't over process, you do want to see small chunks of carrots and walnuts.

  3. Press ingredients into spring loaded cake tin. Place in the fridge while you make the icing. 

  4. The Icing
  5. 1. Place all the icing ingredients into the mixing bowl and blend 10 sec/speed 8 MC on.

    2. Scrape down sides of mixing bowl and blend 10 sec/speed 8 MC on.

    Use this mixture to ice the cake and sprinkle with extra coconut. Refridgerate for at least two hours to firm it up.
