Raw Chocolate Berry Chia Pudding

Ingredients

1 litre(s)

Raw Chocolate Berry Chia Pudding

  • 130 grams Raw cashews or macadamia nuts
  • 440 grams Milk, use any milk of your choice
  • 140 grams Frozen Berries, use mixed or any one type of berry
  • 50 grams Raw Cacao
  • 3-4 tablespoons Raw Honey, You may need more depending on your palate and how sour your berries are
  • 90 grams chia seeds
  • 1 tablespoon Psyllium husk

Recipe's preparation

    Raw Chocolate Berry Chia Pudding
  1. 1.     Place nuts, 220g milk, berries, cacao and honey into the TM bowl. Using only half the milk at this stage will ensure that all ingredients are blended smoothly in the final product. 

    2.     Blend for 20 seconds, slowly increasing to speed 10.

    3.     Scrape lid and bowl and add remaining milk. 

    4.     Blend for 10 seconds, slowly increasing to speed 8.

    5.     Scrape lid and bowl and at this point, taste test the mix for sweetness. You may need more honey if you use sour berries such as raspberries or if you have a sweeter tooth. If you add more honey, blend as above.

    6.     Add the chia and psyllium and blend for 5 seconds on speed 4.

     

    7.     Decanter mix into jars or containers and store in the fridge to set. It usually takes around 2 hours but I like to make it the night before eating it so we aren't waiting around impatiently.

Tip

This pudding has multiple uses and is fantastic for those who need to avoid dairy. We make it with home made almond milk and use it in place of cream and or ice cream. It is also a great breakfast with fruit.

Chia seeds are full of protein and are a great source of sustenance and energy. They are also the highest known source of linoleic acid, (essential fatty acid); great for brain development and to avoid moodiness.  

Variations

·         Leave out the berries and the psyllium husk (a thickener) for a plain chocolate pudding.

·         Leave out the cacao for a berry pudding. You can use other fruit such as mango, paw paw, dragon fruit and passionfruit.

    Sensational!  This is such a good recipe - loved by all in my house (even the non-health conscious).  I've made this several times and each time used a different combination of milk eg. half regular milk and half coconut milk, half almond milk and half coconut milk, etc and it's been delicious every time.     Delicious and super easy! I had frozen carries and raspberries - Devine. Didn't have any psyllium husks so left that out. I also used a can of coconut milk and then topped it up with trim milk to equal the 440g milk needed.

    I have been loving this for afternoon tea! It gives me a healthy chocolate hit mid-afternoon! I make a half quantity (it's not as smooth as the full quantity, but I quite like the texture) for about 4 small serves. I serve with Greek yogurt. Five stars!

    My goodness, this is certainly a very decadent breakfast! Very rich but off-set nicely with some Greek yogurt. Would be lovely served with fresh berries in Summer. I used 3 tablespoons of honey which was just right for us. Thanks for sharing!

    Glad you liked it LittleMissSqueaker. The only difference it would make if you used the macadamias or cashews instead of the almond milk pulp is that it would be more creamy as those particular nuts will lend that quality to any recipe. Great way to use the leftover pulp though.

    I like this recipe. I made 1 ltr of almond milk first, then squeezed it out, used half of it in this recipe and kept other half. Threw in the pulp to this recipe and didn't need to add anymore nuts. So I got this recipe and over a half a ltr of almond milk. Glasses

    other than that, I just toned down the cacao to 30g, worked a treat.
