Recipe's preparation
Place dates in TM 6sec speed 6 or until chopped evenly. Add sugar and butter to TM 5min Varoma temp. speed 2.
While this is cooking measure 4 cups rice bubbles to a mixing bowl. Grease your tray and sprinkle coconut all over the base and sides. Check TM to see how the date mix is going, when ready it should resemble a thick batter. Mix the date mixture with the rice bubbles really well until all rice bubbles are coated. Place mix into prepared tray and press down with the back of a metal spoon until mix is all even. Refrigerate for an hour before cutting into slices. Great for kids lunchboxes or special treat. Enjoy!

What else could I use instead of dates as I don't have any in the cupboard at the moment? Has anyone used saltanas instead?

Stumbled across this recipe and remembered I had a tonne of rice bubbles in the cupboard. As per comments I reduced the sugar to 50g but would probably reduce more next time for our tastes. This was all done easily within a matter of minutes. My daughter will love this when she gets home. Thanks.

What an amazing recipe!! Thanks as I have tried quite a few. I added about a third less sugar and half and half of puffed rice and rice bubbles. I love the dates and then made another batch with dates and dried apple (as I didn't have enough dates)...equally amazing

Wow. These taste amazing! If I didn't have the recipe I wouldn't guess there are dates in this - they cannot be detected at all - and they really make this slice so yummy! My kids are mad for the store-bought LCM type bars - but I'm sure I can win them over with this recipe!
