Semolina Custard

  • 60 g to 100g Sugar to taste
  • 3 egg yolks, or 2 whole eggs
  • 1/2 cup semolina, or 100g
  • 3 cups milk, or 750ml
  • 1 tsp vanilla sugar or essence
  • 1 tsp Butter

Recipe's preparation

    Semolina Custard
  1. Place eggs and sugar into bowl and mix for 1 minute on speed 6 or until mixture has paled in colour.  Scrape down bowl.

  2. Add semolina and milk and cook for 7 minutes at 90C on Reverse + speed 4.

  3. Once thickened add vanilla and butter and mix on Reverse + speed 3 for 10 seconds or until just combined.

Tip

I've used 2 whole eggs and works just as well.

Can add cinnamon on top and can be served as breakfast or dessert.

Can also be used as a filling to a cake.

Depending on desired thickness, can use between 80g to 110g of semolina.

    I grew up with different semolina puddings, so I love this custard for dessert or even breakfast, with a bit of fruit and coconut yoghurt. A quick and easy recipe, that works every time. Thank you.

    I doubled this recipe and then baked it at 200c till it browned on top. Turned out like the milk pie (galatopita) mum used to make! Delicious!
