South African Pannakoek/ Crepes

Batter

  • 3 eggs
  • 640 grams plain flour
  • 1000 grams water
  • 1 tbsp baking powder
  • 135 grams oil, Any Oil works
  • Pinch salt

Recipe's preparation

    Make Batter
  1. Add all your Ingredients to Closed lid

    Mix on speed 6 for 20 Seconds 

    Scrape down sides if there is still lumps Mix an extra 15sec on 

    speed 6.

  3. Make Pannakoek / Crepes
  4. Making Pannakoek you need a shallow fry pan heated up with a bit of oil add approx a large serving spoon /soup Laddle amount to the heated frypan , while adding the batter move the pan around to spread the batter to a thin layer covering as much of the pan as you can  . You will figure out by the second or third crepe how much batter you need to cover your whole pan .

    You will find your first 2-3 crepes seem to be a bit of a flop until you figure out if the consistency is correct sometimes you will need a bit extra water to make it thinner or a tiny bit more flour to make it thicker . 

     

    Make sure your pan is nice and hot also and as you start cooking you might need it turned down a bit if it burns to quickly . 

     

    You will know to flip the pannakoek once you see lots of bubbles on top . Use a thin spatula . 

     

  5. Fillings Suggestions
  6. Traditionally in South Africa fill them with 

    Cinnamon Sugar and a bit of lemon juice or a savoury filling. 

    Basically any filling you can think of you can use . 

    Savoury sauces work really well on Beschamal sauce base , your basic cookbook has a great Beschamel sauce. 

    Add tuna and Onion to the beschamel sauce or just cheese . 

    When it rains we love making Pannakoek as a comfort food.

Tip

Tip : You will find if your Pannakoek keep on sticking to your spatula its because the spatula need to be cleaned and has batter on it .
