STEAMED CHEESECAKE & APRICOT TOPPING

Ingredients

STEAMED CHEESCAKE

  • 500 grams Philadelphia cream cheese
  • 75 grams raw sugar
  • 6 eggs
  • 1 1/2 tsp vanilla extract
  • 200 grams cream

APRICOT TOPPING

  • 200 grams conserve, apricot or desired flavour e.g raspberry
  • 1/2 lemon, JUICED

Recipe's preparation

    STEAMED CHEESECAKE
  1. Line with baking paper a 20cm round tin and place aside.

    Place sugar into TM Bowl and process for 3 seconds on speed 9, leave in bowl. Add Philadelphia cheese and process for 25-30 seconds on speed 5-6, scrape down sides with spatula.

  2. Add eggs, cream and vanilla to TM Bowl and mix for 15-18 seconds on speed 5.

    Pour mixture into prepared cake tin and wrap tightly with plastic wrap (I wrapped mine twice) and place into Varoma set aside.

  3. Add 1500 grams of water to TM Bowl and place on lid and put Varoma into place. Set for 60 minutes on Varoma on speed 2.

    At the end of the cooking time add another 500 grams of water to TM Bowl and set for 40 minutes on Varoma speed 2. Allow Cheescake to cool. Once cool remove from cake tin (handle with care)

  4. APRICOT TOPPING
  5. Add Apricot conserve and lemon juice to TM Bowl and cook for 3 minutes on 90 degress on speed 2. Cool slightly, then spread onto Cheescake. Refrigerate Cheesecake until ready to serve with whipped cream and some biscuits.

Tip

I like to serve this cheesecake with some whipped cream and biscuits ( I use my Ginger & Cardamon biscuits ).

This Cheescake is very similar to a baked cheescake and has a lovely light texture.
