Ingredients

500 g

Strawberry Fudge

  • 430 grams White Chocolate Bites
  • 200 grams sweetened condensed milk
  • 1 gram Pure strawberry extract
  • 1/4 level teaspoon Pink colouring, or adjust colouring to personal preference
  • 1 gram Strawberry essence
  • 10 pieces Strawberries from chunky strawberry jam, For example Roses Strawberry Jam

Recipe's preparation

    Strawberry Fudge
  1. Add chocolate & the tin of condensed milk into Bowl.

  2. Cook at 100 degrees for 10 minutes on Speed 3.

  3. Scrape down sides then add the colouring & flavouring. Stir thru on Reverse Counter-clockwise operation for 5 seconds. Check colour & flavour & adjust to taste, and mix again if more is added.

  4. Place strawberry jam pieces into the TM bowl, & mix 60 seconds/Counter-clockwise operation/speed Gentle stir setting

  5. Pour into a pre-lined container & leave to cool.  Then put into refrigerator to set.  Once set, cut into small bite-sized pieces, or roll or press into moulds.

Tip

This is a rich chocolate based fudge. The strawberry jam adds an authentic strawberry flavour & a little colour, but you could also use chopped glazed strawberries, or  dried strawberries. The jam sill make a softer fudge.

You can add optional garnish, patterning, sprinkles or decoration to the top of the fudge - do this immediately after pouring into tin before it sets.
