Ingredients

Sweet Potato Waffes

  • 260 grams sweet potato - 2cm
  • 40 grams water
  • 30 grams Butter
  • 165 grams Milk
  • 190 grams plain flour
  • 1 egg
  • 1 1/2 tablespoons baking powder
  • 15 grams Desiccated Coconut
  • 1 teaspoon cinnamon

Recipe's preparation

  1. 1. Preheat waffle maker (or frying pan if you don't have a waffle maker).

     

    2. Add sweet potato and chop - 5 seconds/Speed 7. Scrape down.

     

    3. Add water and cook - 3 minutes/Varoma/Speed 1.

     

    4. Add butter and blend 10 seconds/Speed 7. Scrape down.

     

    5. Add milk, flour, egg, sugar, desiccated coconut, baking powder and cinnamon and mix - 10 seconds/Speed 4.

     

    6. Spoon into greased waffle maker (or frying pan) and cook according to waffle maker instructions (or if in frying pan cook and flip until both sides are browned).

     

    Serve with maple syrup (or without - I give this to my 1 yr old twins without a topping for their breakfast as it is very moist and fluffy!).

    These are amazing!!


    My daughter requested sweet potato waffles for her birthday and I couldn't find our usual recipe. These are even better!! I left out the coconut (kids aren't fans) and added 1 tbls sugar. Will make a double batch next time. Thanks for sharing 😊

    Best waffle recipe I have made, next time I might try 1tablespoon instead of 1 1/2. No need to add sugar.

    These are delicious, thank you for the recipe! I've tried another sweet potato waffles recipe before and it was a complete disaster.
    I've used coconut milk and haven't added any sugar (not listed in the ingredients but listed in the instructions...?), and they were still yummy even without any topping, the sweet potato taste is just right Tongue
