  • 150 gram sugar
  • Zest of one lime
  • 400 grams fresh pineapple, Cut into chunks
  • 1 egg white
  • Rest of the lime, Pith removed
  • 400 grams Coconut Milk or Cream, frozen into icecubes
  • 600 grams ice cubes
  • 150 grams Malibu white rum, (optional)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Mill Sugar and Lime Zest Speed 10 for 10 seconds.

    Add Fresh Pineapple, egg white and lime flesh and puree on speed 10 for 7 seconds.

    Add frozen cubes (ice and coconut milk) and Rum if using.

    Speed 9 for 1min30secs.  

    Enjoy
