Traditional Steamed Christmas Pudding

  • 130 g dried cherries
  • 130 g currants
  • 130 g blueberries
  • 130 g dried red plums
  • 130 g Apricots
  • 1 vanilla bean
  • 1/2 cinnamon stick
  • 1/2 tsp grated ginger
  • 1 tsp ground ginger
  • 1 tsp ground allspice
  • zest of 1 lemon
  • 70 g Butter
  • 130 g brown sugar
  • 20 g treacle
  • 2 eggs
  • 70 g Corn Flour
  • 70 g flour
  • 130 g brandy
  • 130 g toasted almonds

Recipe's preparation

    Steamed Christmas Pudding
  1. Place dried fruit into non-reactive bowl and drizzle with brandy. Cover and set aside at room temperature for up to a week. Stir occasionally.

  2. Place almonds, vanilla, spices and zest into TM bowl and mill

    10 secs /speed 10.

  3. Add remaining ingredients except fruit and mix 10 secs/ speed 6.

     

  4. Add soaked fruit and stir 6 secs/Reverse/speed 6.

  5. Line basket with a double layer of Chux or pudding cloth (e.g. muslin, calico). Pour mixture into cloth and wrap tightly at the neck, twisting the cloth. Secure with a rubber band.

  6. Rinse TM bowl and add 700g water. Insert basket and steam.  Ensure the pudding fits within simmering basket comfortably, taking care not to overfill.

    60 mins/100ºC /speed 2. Check water level and top up to 700g. Steam a further 60 mins/100ºC/speed 2.

  7. Remove pudding and either serve warm or allow to cool completely before hanging in dark dry conditions to keep until Christmas. To reheat, insert pudding back into basket and add water to TM bowl as directed above. Steam for

    30 mins/100ºC/speed 2.

  8. Best served warm, with whipped cream and Brandy Custard.

    Just steaming as I write, the last step where you add the fruit and set for 6 seconds reverse speed 6 ... it breaks up fruit too much so would recommend lower speed or just wooden spoon , also batter was thinner than I expected . Let’s see how it turns out!

  • We added slivered almonds

    We added slivered almonds when we added the fruit and we used a mixed fruit mix. You saved the day for Christmas in July. Didn't have time to soak for a week, so left brandy in for about 30 minutes. Easy recipe.

    tmrc_emoticons.)I have a copy of this recipe from the 2011 TM calendar.  It requires 130g of toasted almonds and 130g of bbrandy .The flour quantity in this recipe (otherwise the same) is 140g.
