  • 12 cardamon pods
  • 4 cm cinnamon stick
  • 8 whole cloves
  • 6 black pepercorns
  • 2 1/2 tsp fennel seeds
  • 1 1/2 tsp ground nutmeg
  • 2-3 cm fresh ginger
  • 2 tbsp Black Tea Leaves
  • 600 g water
  • 120 g honey, or other preferred sweetener
  • 1.2 litre milk or soy milk

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place cardamon, cinnamon, cloves, pepercorns, fennel and nutmeg into bolw and mill 10sec / sp9

     

     

  2. Add ginger, chop 2sec / sp5.  

     

  3. Add tea leaves, water and honey.  Cook 8min / 100 degrees / sp1.  Taste and continue to cook for 1-2 minutes for a stronger flavour.

     

  4. Add milk and warm for 8min / 70 degrees / sp 1 or until temp has been reached.

     

  5. Strain and serve

Tip

Love Chai Tea and want it reasy to make for one or two? 

Double the spices, mill, add tea leaves and store. When ready to make, chop ginger to taste, add approx 1 teas of spice tea mix per person and honey to taste, add approx 80g water per person, cook at 100 degrees for a couple of minutes them add 100-150g milk and warm to 70 degrees. Strain and serve. If you like it frothy, return strained chai to bowl put in butterfly and mix at speed 4 for 20-30 seconds.
