Ingredients

  • 450 grams sugar
  • 500 ml water
  • 50 ml vanilla essence or almond essence

Recipe's preparation

  1. Put sugar and water into thermomix.

    Cook on varoma Gentle stir setting for 5 minutes.

    After this use a wet pastry brush to move any sugar crystal that have not disolved from sides of bowl.

    Leave MC(measuring cap) off to left liquid evaporate and cook for 30 minutes on Varoma Gentle stir setting.

    Put vanilla essence in through the top hole in the last 2 minutes.

    Makes 500 ml.

Tip

Store syrup in sterilized bottle.

I also use the syrup to pour over hot dessert cakes such as  upside down apple or pear cake.

First you need to reduce this  syrup for 2-5 minutes in frypan over medium heat while occassionally shaking the pan to mix.

    Just finished making this... i mixed raw sugar and brown sugar and it is a beautiful dark colour.. can't wait until it cools then I can put it in a pretty bottle and give it to my mum!! SO much cheaper than the bottled ones they sell here... plus she won't be disappointed with the flavour because it can be made to taste tmrc_emoticons.)

    I used this a a guide because I only wanted to make a small amount as a trial. used 1 cup of sugar (raw with a bit of brown). Came out a love dark colour.

    I've been making this recipe for the last couole of months for my husband who loves store-bought Vanilla Coffee Syrup. He loves it and we save a huge amount of money making our own - $15 - 20 per 750ml is RRP! Ive been adding a small proportion of raw sugar or brown sugar to my recipes which gives a lovely caramel colour. I also use a combination of vanilla essence and vanilla bean paste, which gives a lovely taste and appearance (all those lovely little vanilla seeds floating about).

    I made this to replace store bought caramel syrup for my coffees.

    the colour turned out quite pale, so not sure if it needed a bit longer, but otherwise it was the perfect sweetener for my coffee...I'm just not a fan of sugar granules stirred through my coffee lol.
