      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place sugar into mixing bowl and mill 15 sec/speed 8.

  2. Add lemon juice and blend 15 sec/speed 5-8, increasing speed gradually from speed 5 to speed 8.

  3. Add ice cubes and crush 15 sec/speed 5-10, increasing speed gradually from speed 5 to speed 10.

  4. Add Pisco and mix 30 sec/speed 5-10, increasing speed gradually from speed 5 to speed 10.

  5. Add egg whites (optional) and blend 1 min/speed 8-10, increasing speed gradually from speed 8 to speed 10.

  6. Place simmering basket or a fine-mesh sieve over a large jug and strain Pisco sour into it, garnish with limes and serve immediately.

Tip

We reccomend using organic lemons if possible in this recipe. A traditional Pisco sour uses Pica lemons, which are not easily obtained in Australia or New Zealand, but any type of lemon (or even limes) can be used in this recipe.

Pisco is a light coloured brandy produced in both Peru and Chile, and can be purchased at most major liquor stores.

For a lighter flavour, try replacing the Pisco with Chardonnay.

Ginger Pisco: add a slice of fresh ginger in step 1 and proceed as per recipe.

This recipe is also suitable for TM31.

    Delicious! I used a mixture of lemon and lime juice, and garnished with 3 drops bitters.

    Totally didn't read the number of servings/portions before mixing this up for just 2 people... hopefully it'll keep in the fridge for a day or two Party

    PERFECT summer cocktail! Was hesitant at first but really enjoyed the refreshing flavours with a pleasant after taste.
