      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Soy Bean Preparation
  1. Place soy beans into large bowl

    Cover with water

    Soak over night

  2. Preparing Soy Bean Pulp
  3. Place half the soaked soy beans into thermomix jug and cover with cold water so the water is about 2cm above the beans

    Grind 45 secs sp 10, set aside in separate bowl

    Repeat exactly with remaining soy beans

    Place roughly half of this ground mixture into the thermomix jug and add 1000mls water

     

     

    Cook 20 minutes, 80 degrees, speed 2, MC on

     

    Place into nut milk bag and drain, squeezing out as much milk as you can. You can do this one batch at a time or both together depending on if it will fit in your nut milk bag. This will be very hot so you can allow to cool a little before wringing out the liquid, or put on your marigolds to protect your hands.

    Be very careful to keep an eye on the thermomix when the pulp is cooking as it can boil over. If it looks like it will boil over, turn the thermomix off while it settles back down, then continue

     

     

    Repeat with second batch of bean pulp

Tip

You will need a nut milk bag to complete this recipe

If you would like the soy milk to be sweeter, you could blen with a few pitted dates to taste but don't do this for tofu
