Frozen salmon with coconut quinoa & avocado

  • 1 cup quinoa
  • 2 Frozen salmon fillet, about 130g each
  • 400 grams coconut milk or coconut cream or half each
  • 1/2 to 1 lemon, to taste
  • 1 avocado
  • 2 tablespoons sesame seeds

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Put quinoa in a bowl, cover with water and soak for 10 minutes.
    2. Line varoma tray with wet baking paper.
    3. Remove frozen salmon fillets from plastic, rinse, pat dry and put on varoma tray on top of baking paper.
    4. Drain quinoa (a sieve is useful for this) and rinse under running water for a minute, drain.
    5. Put quinoa in TM bowl.
    6. Add 400g of coconut milk/cream to TM bowl.
    7. Put lid & varoma in place, cook 18 mins/Varoma/Sp 2.
    8. Check if fish and quinoa is cooked, cook for another couple of minutes if not.
    9. If necessary, pour excess liquid out of TM bowl.
    10. Stir the zest and juice of half a lemon through the quinoa. Taste and add more lemon juice if desired.
    11. Divide quinoa among two plates, top with each salmon fillet, add half an avocado sliced, and sprinkle sesame seeds over the avocado.
