Prawns with sauce Bisque

  • 600 grams green prawns
  • 1 onion
  • 1 clove garlic
  • 1 cup dry white wine
  • 1 cup stock
  • 1 dash cognac
  • 1 pinch chilli powder or cayenne pepper, to taste
  • some cream
  • watercress or fresh dill for decoration

Recipe's preparation

    Prawns with sauce Bisque
  1. 1- Peel and devein te prawns, keep heads and shells, marinate prawns in olive oil, garlic and chili or cayenne pepper

    2-Chop onion and garlic 5 s speed 5, add 1 tbs olive oil and cook 3mn temperature Varoma speed 1

    3-Add heads and shells of prawnsand cook 3 mn temperature Varoma Speed 4


  2. 4- Add a dash of Cognac and let infuse 1 or 2 mn then 200ml of dry white wine and 200ml of stock. Season with salt and a pinch of Cayenne pepper, cook 5 mn temperature 100º speed 2

    5- Use turbo speed for 5 s and strain. The extra sauce can be kept and served as Bisque soup the next day with some fresh cream.

    6- To serve, quickly panfry the prawns (2 or3 mn) and dispose on sauce. Garnish with watercress or dill
