Salmon and couscous salad with lemon dressing

  • 2 thick fillets of salmon
  • 200 grams of couscous
  • 250 grams of boiled water
  • 1 lebanese cucmber, thinly sliced
  • 1 carrot, shredded into noodles
  • 1 medium red capsicum, seeded and cubed
  • 1 cup of loosly packed corriander/or parsley
  • DRESSING
  • 80 grams mls of lemon juice
  • 2 minced cloves of garlic
  • 2 level tablespoons of fish sauce
  • 1 heaped tablespoon of brown sugar
  • 1/4 teaspoon of sesame oil
  • 2 level tablespoons of finley chopped corriander or parsley

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Fill the bowl with 500 grams of water, place the salmon fillets in the varoma base and cook 12 minutes, Varoma, speed 3 - now let them cool once cooked
    AIRFRYER
    12-14mins 180, skin side up
    Add the cous cous to your serving bowl and pour over one cup of boiling water
    Slice all your ingredients while the cous cous cools and then fluff the cous cous up with a fork
    Juice the lemons and add the ingredients to make the dressing
    Add the salad vegetables to the bowl of cous cous and mix gently
    Add the salmon and flake over the top of the salad, then pour over the dressing
    Mix gently and serve

Tip

you may use prawns, or any thick flaky fish/ chicken and swap the corriander for parsley
