Steamed Snapper

  • 1 Whole Snapper
  • 1 bunch Fresh Corriander
  • 1 piece fresh ginger
  • 3 pieces Fresh Garlic, peeled
  • 6 leaves Kaffir lime leaves
  • 1 stick lemon grass stem
  • 2 pieces red chilli
  • 6 pieces shallots
  • 65 grams Sweet Soy Sauce, (Kecap Manis)
  • 65 grams light soy sauce
  • 2 tablespoons fish sauce
  • 1/2 tablespoon sesame oil
  • 1/2 tablespoon peanut oil
  • 500 grams water

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Marinade Preparation
  1. Place Garlic, Ginger and 4 Shallots in the bowl and chop 2 Sec/Speed 7

    Scrape sides and repeat above step if required

    Add Corriander, Kaffir Lime Leaves, Chillies (remove seeds if necessary to reduce heat), remaining shallots (bottom white half only), Soy Sauces and Oils Chop 5 Sec/Speed 4

    Remove marinade and set aside in another container

    Wash and dry mixing bowl

  3. Wash fish then dry

    Score each side of fish with slits a few centimetres apart and couple of centimetres deep

    Line the varoma tray with grease proof paper

    Place water into mixing bowl

    Place fish on baking paper, place lemongrass inside the fish and pour over the liquid which was set aside earlier

    Replace varoma lid

    Steam fish for approximately 35 minutes/Varoma/Speed 1

    Garnish with remaining Corriander and Shallots

    Serve with Asian veggies or salad

Tip

Dependant on the size and thickness of your fish, you may need to increase or decrease the time taken to steam the fish.

    I have already commented on this recipe (years ago) and can't believe no-one has left a comment since! 🤦🏻‍♀️
    Unfortunately it wouldn't let me leave a star rating again but if I could have, it would have been 🌟🌟🌟🌟🌟.
    I wanted to post this separate comment as this time, I bought two smaller Snappers to see if I could fit them in the Varoma. It worked a treat! They both fitted snugly onto the Varoma tray when placed in a top and tail position. I cooked them for exactly the same time as I would have for one snapper.
    Absolutely delicious!

    This went down a treat with the extended family at today's Fathers' Day lunch. Thanks for the recipe - delicious....such a shame you can't fit a huge snapper in the Varoma.

    Absolutely delicious and easy.  Fish was not overcooked - our snapper was 800 grams.  Great use of the Red thai curry paste and what a great idea putting a stick of lemongrass inside the fish.  This will be our go to fish dish for a long time to come. thankyou!!!
