- 30 g Olive Oil.
- 1 Onion, large.
- 1 Capsicum, seeded.
- 2 cloves Garlic.
- 500 g Beef mince, lean.
- 30 g Taco seasoning mix.
- 425g can Refried or Mexican mix, beans.
- 425g jar Mild Salsa.
- 1/3 bunch Coriander leaves.
- 175 g Packet of Corn Chips.
- 100-150 g Grated cheese., Tasty and Mozzarella mix.
- Avocado or Guacamole.
- Chopped Tomatoes.
- Sour cream, optional.
- Coriander leaves.

Put onion, garlic, capsicum and 1/3 of a bunch of coriander into the bowl. 5 secs/speed 8.
Scape down sides and repeat process if there are still large pieces.
Add olive oil and cook until onion is a light brown in colour. 5 mins/ 100deg/reverse 1.
Add beef mince. Cook 5 mins/100 deg/ reverse 1, until browned.
Add taco seasoning. Cook 10 mins/100deg/reverse 1.
Preheat oven to 180 degrees C.
Add beans, salsa and coriander. Cook 5 mins/100 deg/reverse 1.
Spoon filling into a greased casserole dish.
Combine cheese and corn chips in a large bowl and crush evenly.
Sprinkle cheese and corn chip crumble evenly over the top of the filling.
Bake for 12 - 15 minutes, until topping is light brown.
Garnish to your taste and serve with a salad.
