Bangalore Chicken

  • 6 garlic
  • 50 grams olive oil
  • 2 onions
  • 50 grams coriander
  • 3 Green Chillies
  • 1 tablespoon Ground Coriander
  • 1 tablespoon ground turmeric
  • 700 grams chicken thighs, cut into 3/4 pieces
  • 1 tablespoon chicken stock paste
  • 1 pinch salt
  • 150 grams water
  • 300 grams coconut milk/cream

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Add fresh Coriander & chillies to TM bowl, chop for 6 seconds on speed 6. Scrape down bowl and repeat. Scrape down bowl and repeat. You want a purée so sometimes add a little bit of water and purée on speed 9 for 10 secs. Set aside
  2. Add oil, onion, garlic to bowl, chop for 5 seconds on speed 5. Saute for 5 minutes, 100c, speed 3, no MC
  3. Add Turmeric, Cumin, Coriander saute for 3 minutes 100c speed 3, No MC
  4. Add corriander chilli paste and chicken, stir with spatula to coat ensure its coating in spices. No MC
  5. Add stock, coconut cream and water. Cook 15 mintues, 100c speed 3 reverse with basket on top.
  6. Check that chicken is cooked then set aside in a Thermoserver. Return sauce to the bowl, cook for 10 minutes, varoma temp speed 1 to reduce the sauce. No MC
  7. Pour sauce over chicken and serve with rcie and padadums

Tip

You can use the butterfly to keep meat off the blades, though cutting the chicken into large pieces will works well.
