Main dish

  • 4 Chicken fillets
  • 2 slices bread
  • 80 grams Parmesan cheese
  • 1 small handful parsley
  • 3 rashers bacon
  • 90 grams Butter
  • 2 cloves garlic, crushed
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dry mustard

Basil sauce

  • 80 grams oil
  • 60 grams white vinegar
  • 1 clove garlic, crushed
  • 1 bunch fresh basil leaves
  • 80 grams cream
  • 1 egg yolk

Recipe's preparation

    Main Dish
  1. Put 2 slices bread, 80 g parmesan cheese and small handful of parsley into thermomix bowl sp 5, 30 secs. 

    chop bacon and lightly fry (or put on pkate in microwave with a piece of kitchen paper over top, for 30 secs to 1 min).

    Add bacon to mixture in bowl, 15 secs reverse sp 4.

    Select baking dish and put in dish 90 g butter, 2 cloves of garlic (crushed), 1 t worcestershire sauce and 1/2 t dry mustard. Put in microwave for 30 secs to melt butter, stir to combine.

    Dip chicken fillets in butter mixture, turning to coat.

    Tip breadcrumb/parmesan/bacon mixture over fillets.

    Bake uncovered at 180 degrees for 20 - 25 minutes.

  2. Basil sauce
  3. Combine all ingredients of sauce (except for egg yolk) in bowl of thermomix.

    Cook for 3 minutes at 60 degrees, speed 2. add egg yolk in last 30 seconds of cooking time.

    Pour sauce over cooked chicken.
