- 510g lime/lemon marmalade
- 6cm Root ginger
- 1 clove garlic
- 350g brown sugar
- 2 tbsp Dijon mustard
- 60ml bourbon
- 250ml juice - orange, apple or pineapple

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- chop garlic and ginger 3 secs sp 7.
add marmalade, brown sugar, juice, mustard and mix 10 secs sp 4.
Cook 10 mins 100C sp 2 until slightly reduced. Add bourbon.
You can leave to cool or use straight away on your ham with skin removed and fat scored into diamonds. Most hams are cooked already so just need to get heated through. Pour half glaze over ham, cook @200 for 1 hour .Basting every 15 mins, adding rest of glaze, till golden. Enjoy

Tip
This is enough for a 1.6 kg half ham. If you want to glaze a full leg of ham, double the recipe.
