Chicken and Vegetable Pilaf

Ingredients

Pilaf

  • 3 pieces chicken thighs cubed
  • 1 onion large, Chopped
  • 2 tomatoes, ripe, Skinned and deseeded chopped
  • 1 zucchini, Diced
  • 1 carrots diced
  • 4 button mushrooms sliced
  • 1 rice, Scant cup medium grain(calrose)
  • 1 bay leaf
  • Freshly ground black pepper
  • parsley, fresh, Chopped finely
  • chicken stock, Good quality 1 litre
  • 1 heaped tablespoon continental flour
  • Oil for frying, Olive is good
  • Baby Spinach Leaves, 2 handfuls

Recipe's preparation

    Pilaf
  1. Place flour in a plastic bag, add chicken and shake to cover. I prefer to brown chicken in a pan to  get a nice colour but you could sauté in the TM bowl if preferred. Remove from bowl and add onion with some oil if necessary chop 2 seconds speed 4. Cook for 4 minutes Counter-clockwise operationvaroma  speed 3 then add other veges except tomatoes and spinach and cook another 5-6 minutes. Prepare tomatoes by pouring boiling water over them, leave for a couple minutes then place in cold water. Skin should peel off easily. Cut in half, Squeeze slightly as you Shake sharply to remove seeds or remove with your fingers. Chop then add to TM. Add bay leaf and a pinch of sugar and a dash of white vinegar. Cook another 3 minutes, stir in rice. Heat stock in saucepan or use pan that chicken has been browned in(if you did it that way) to deglaze then add to bowl.return chicken to bowl and bring up to boil then simmer 60 degrees Counter-clockwise operationspeed 2 for 25 minutes. Should be still 'wet'. Add more stock or water if necessary and season to taste,add baby spinach 5 minutes before done. Lastly stir in parsley.

Tip

Worth using fresh ripe tomatoes instead of canned, much fresher flavour.  Other vegetables can be substituted eg. Chargrilled red capsicum, artichoke hearts, sweet potato, sliced beans or snow peas, even broccoli florets.
