Chicken Kiev

  • For Kievs:
  • 50 g parmesan cheese
  • 500 g chicken breast, (cut into medium sized pieces)
  • 1 egg
  • 20 g plain flour
  • 1/2 tsp salt
  • For Garlic Butter:
  • small handful of fresh parsley
  • 3-4 cloves of garlic
  • 80 g Butter
  • Coating:
  • 1 egg, beaten
  • Breadcrumbs
  • Olive oil
  • 6

Recipe's preparation

  1. Grate parmesan for 10 seconds on speed 9.  Set aside.

    Turn TM onto speed 7.  Drop parsley and garlic through hole in lid.  Scrape down bowl. Add butter and combine at speed 5 for 30 seconds. Scrape garlic butter from bowl and divide into 6 portions.  Set aside.

    Place chicken into TM bowl and mince for 30 seconds on speed 4. Add parmesan, egg, flour and salt.  Mix for 30 seconds on speed 4. Divide chicken mixture into 12 portions.  Flatten out each into a small disc.

    Place a portion of garlic butter into the middle of 6 of the chicken discs.  Place another chicken disc on top of each and sandwich butter in the middle, making 6 kievs.  Squeeze edges closed so that the butter (hopefully) won't leak out during baking.  (I made mine into more of an oval shape so they resembled a regular kiev).

    Dip kievs into beaten egg and then roll in breadcrumbs to coat.   Place kievs onto a tray lined with oil-brushed baking paper.  Spray top of kievs with oil. Cook in 180 degree Celsius oven for 30 minutes, turning after 15 minutes.

    We made these for the first time tonight and we all loved them. Mine had no leakage and we had a laugh when my 16-year-old cut into his and it made a little "pop" noise. He called it something other than a pop though, much to the amusement of his younger brothers. I made my own breadcrumbs with leftover bread flavoured with a little parmesan, onion salt, dried oregano and lemon rind. We'll be making these again. I might even try them with ham and cheese inside.

    I cooked my kievs 7 minutes longer than the recipe suggested and they were crunchy and golden.

    Best kiev's ever! And for the first time i didnt have any explode in the oven. Wrapping the butter in the 2 seperate discs of chicken worked awesome. I added some itallian herbs to the chicken mix, and will make these time and time again!

    3 out of 4 in my family love this! For the child that doesn't, I just make chicken nuggets with the chicken mixture leaving out the garlic butter and she's loves that! So one meal still made with a slight difference keeps our family happy! :-)

    I cooked them for too long, as I made mine a whole heap bigger, (3 x ingredients), and was a paranoid about undercooking, but even so, they were fantastic, a huge hit.  Will definitely do again, but, even for my big eating family will only double recipe and stick to cooking time frame.

    Thanks to advice of others on this site, I used rubber gloves, and rolled  butter bits between chicken 'patties', then flattened them a bit before doing the egg and breadcrumb thing and baking.  No seepage.  All contained.

    delicious.

  • Don't lose your  garlic

    Don't lose your  garlic butter - so as not to lose the garlic butter during cooking, I make little baskets for each kiev out of tinfoil. Cut a small square of tinfoil (only has to be big enough to come about half way up the sides of the kiev). Put one kiev in centre of foil and pinch together each corner of the foil so kiev is sitting in a little basket. Put all baskets onto oven tray and cook as normal.

    I followed the recipe exactly, apart from I put the kievs in the fridge for half an hour before crumbing them. Made it easier to handle them!
