- For Kievs:
- 50 g Parmesan cheese
- 500 g chicken breast, (cut into medium sized pieces)
- 1 egg
- 20 g plain flour
- 1/2 tsp salt
- For Garlic Butter:
- small handful of fresh parsley
- 3-4 clovesof garlic
- 80 g Butter
- Coating:
- 1 egg, beaten
- Breadcrumbs
- Olive oil

Recipe's preparation
Grate parmesan for 10 seconds on speed 9. Set aside.
Turn TM onto speed 7. Drop parsley and garlic through hole in lid. Scrape down bowl. Add butter and combine at speed 5 for 30 seconds. Scrape garlic butter from bowl and divide into 6 portions. Set aside.
Place chicken into TM bowl and mince for 30 seconds on speed 4. Add parmesan, egg, flour and salt. Mix for 30 seconds on speed 4. Divide chicken mixture into 12 portions. Flatten out each into a small disc.
Place a portion of garlic butter into the middle of 6 of the chicken discs. Place another chicken disc on top of each and sandwich butter in the middle, making 6 kievs. Squeeze edges closed so that the butter (hopefully) won't leak out during baking. (I made mine into more of an oval shape so they resembled a regular kiev).
Dip kievs into beaten egg and then roll in breadcrumbs to coat. Place kievs onto a tray lined with oil-brushed baking paper. Spray top of kievs with oil. Cook in 180 degree Celsius oven for 30 minutes, turning after 15 minutes.

This is my favourite Chicken Kiev recipe, I use breast or thighs, whichever I have on hand. I add season-all salt to the chicken mix and dried mixed Italian herbs to the breadcrumbs. I also deep fry quickly in my wok first, I find this seals them completely and eliminates the risk of losing the delicious garlic butter.

What did i do wrong? I made sure the garlic butter was sealed in and there was no where for it to escape. Should i possibly refrigerate prior to placing into the oven? What do you do to avoid this from happening?

We made these for the first time tonight and we all loved them. Mine had no leakage and we had a laugh when my 16-year-old cut into his and it made a little "pop" noise. He called it something other than a pop though, much to the amusement of his younger brothers. I made my own breadcrumbs with leftover bread flavoured with a little parmesan, onion salt, dried oregano and lemon rind. We'll be making these again. I might even try them with ham and cheese inside.

but thats normal in our home!! I will cut back on the garlic and parsley next time so its not as strong for them, I think I may make the butter filling up in to seperate lots and freeze ready for next time!

Best kiev's ever! And for the first time i didnt have any explode in the oven. Wrapping the butter in the 2 seperate discs of chicken worked awesome. I added some itallian herbs to the chicken mix, and will make these time and time again!
