Coconut Curry Chicken

  • 1 brown onion, halved
  • 1 clove garlic
  • 10 g olive oil
  • 1 teaspoon EDC stock
  • 1 teaspoon curry powder
  • 2 chicken breast, 2cm cubes
  • 400 g Tinned tomatoes
  • 300 g coconut cream
  • Salt and pepper, to taste

Recipe's preparation

    Coconut Curry Chicken
  1. Peel onion and halve. Add to bowl.


    Peel clove of garlic and add to bowl.


    Chop for 3 seconds, speed 5.


    Add olive oil and sautee for 3 minutes, Varoma, speed 1.


    Add all other ingredients and cook for 17 minutes, Counter-clockwise operation 100 degrees, speed 1 with the MC off to help the sauce reduce.


    Serve with steamed rice.

    Add some vegetables such as frozen peas and corn if you want to fill it out a bit more.

    This was so easy.  I will definitely make this again.  I would also add a bit more curry powder for our taste.  I used coconut milk instead of cream and added chopped cauliflower and kale.

    Easy coconut curry chicken - Added sweet potato (baked separately) and served with rice.  Only cooked with one chicken breast and will reduce cooking time if I only use one again because the chicken turned out a little dry. Otherwise I thoroughly enjoyed the flavours of the sauce. i will make again.  Used half the sauce and will use the remaining sauce for another meal.

    This recipe was delicious, quick and easy.

    I didn't have any coconut cream, so I used lite coconut milk and a touch of cornflour And Italian diced tomatoes, still was great! Cooking 9

    Doesnt get any quicker than this.

    I added sweet potato in the cooking process & increased Vege stock to 1 tablespoon.

    I've cooked this twice. First time with basket in place of mc and it was great. Second time with mc. Big mistake. Was very watery and tasteless.  So please note use the BASKET not the mc.

    It the stock in the Everyday Cookbook you get with your machine.  If you got the new tm5 the book is called the basic cokbook. It was called everyday cookbook with the old tm31 machine.  So whenever you see edc thats what people are referring to.

    This flavour was really enjoyable. However 1 chicken breast with all that sauce seems not quite right. I used 4 large chicken thighs but will use 6 next time & added broccoli, mushroom, sugar snap peas & capsicum & there was STILL a lot of sauce.  I also added 1 large teaspoon of chilli powder to give it a bit of a kick. Yummo thanks.
