Lamb shanks with mash potato

40grams Parmesan cheese

  • 4 Small carrots, Diced
  • 1 red onion, Halved
  • 2 Pieces garlic
  • 2 sprigs of Rosemary
  • 40 grams Butter
  • 4 Lamb Shanks
  • 2 X 400grams tins of tomato
  • 2 tablespoons Vegetable stock paste
  • 500 grams potato
  • 50 grams Milk
  • 20 grams Butter
  • Beans or broccoli

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place the cheese in and grate 10sec/ sp9 then put aside . 

    Place carrot in the bowl and grate 2sec /sp5 and place in a separate bowl to the side .

    Add onion, garlic and rosemary to the bowl and chop 5sec/sp7 , scrape down the sides the add the butter and sauté for 3mins/ 100deg / sp1 .

    While your waiting for that to cook, place your lamb shanks into the varoma dish making sure there is enough room for steam to come up around them. Try placing the thicker part of the shank to the bottom and place a small cut in the thickest part of the shank, this will also assist in cooking quicker .

    Once the onion mixture has sautéed, scrape down the sides then add your canned tomatoes and stock and place the lid on . Place the varoma on top of the lid and cook 30mins / varoma / sp 2 .

    While the shanks are cooking peel your potatoes and place in your thermoserver with some water so they don't go brown .

    When  the time has finished for the shanks turn them over in the varoma , then put  the carrots into your bowl with the tomato sauce . Place the varoma back on top and cook for 30 mins / varoma / Counter-clockwise operation/ sp 1.5 . When finished place the lamb shanks and sauce into your thermoserver . 

    Rince out your bowl then add 500grams of water , put potatoes in your simmer basket and then place in bowl , pop lid on and cook for 20mins /100 deg / sp 2 . In the last 5 mins you can add you other veggies to the varoma and change temp to varoma . 

    Once finshed place veggies in a small thermoserver and potatoes into another one as well . Place milk into the bowl and heat 3mins / 90deg / sp2 , once finished put in your butteryfly and give a little clockwise turn to help it lock under the blades , put your potatoes , butter and Parmesan cheese in to the bowl and mix 30-40 secs on sp 3.5 .

Tip

To get my thermoservers to stay warm when I start cooking i add boiling water to them so they are already heated before I place food in them

    The shanks were better when cooked for another hour, the sauce was amazing the next day with mince. I would definitely make he sauce again.

    OK but not fabulous.

    The sauce was brilliant, the mash was very nice however the shanks were still quite tough although edible.  The slow cooker version is still our favourite.

    The shanks needed to be cooked longer, they didn't fall apart nicely, sauce was a tad too salty for my taste, butthat could be my stock which I think is too salty.

    Jam packed full of flavour, I did add about 150ml of water to the tomato sauce after the first 30 minutes.  So thrilled with this. Lamb shanks cooked well. Thank you!

    Wow, I never would have thought about having lamb shanks in the Varoma they were so moist and tender. I fit six in the Varoma and cooked for an extra 15minutes. Thanks for a great recipe oh and the mash potato was the best I've had in the thermomix too.
