Moroccan Apricot Chicken

Ingredients

Marinate for Chicken

  • 2 level teaspoons cinnamon
  • 2 level teaspoons tumeric powder
  • 2 level teaspoons cumin
  • 2 level teaspoons coriander ground
  • 1 level teaspoons each of salt and pepper

Chicken

  • 8 pieces chicken, I use thigh

Sauce

  • 5 cloves Garlic Sliced
  • 2 Green Chillies
  • 1 onion
  • 100 grams ginger
  • 2 level tablespoons tomato paste
  • 2 level tablespoons honey
  • 5 sprigs thyme sprig
  • saffron
  • 1 zest and juice of a lemon
  • 1 can Apricots
  • 200 grams white wine
  • 300 grams chicken stock

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Marinate Chicken
  1. Place Cinnamon, Tumeric, Cumin, Coriander, Salt and Pepper into a plastic bag and mix.

  2. Place Chicken pieces into bag and coat chicken with spices.  Leave as long as possible before cooking.

  3. Fry chicken in pan to seal in juices. Dont cook right through. Place in Varoma dish.

  4. Sauce
  5. Place chillies, onion, ginger, thyme into the Closed lid

    Speed 5 10seconds.

    Scrape down.

    Add garlic, tomato paste, honey, lemon zest, juice, apricots - discard juice, white wine and chicken stock.

    Place varoma dish on top of the Closed lid

    Speed 3, Varoma, 25min

    ( place veggies in varoma tray, if you would like to have with chicken)

     

  6. To Serve
  7. Serve with couscous or tabouli and steamed vegetables.

    An interesting mix of aromas and tastes. This recipe could do with re-write. Some instructions were not clear. For example clearly state chicken goes into veroma dish. Used chicken legs, cooked well with this timing. I also added fresh lime juice that I needed to use up.

    Seemed to be some steps missing in this recipe, I guessed maybe you steamed the chicken tried that but was too much and didn't cook well so put in bowl and reversed speed and cooked well, i also added French onion soup to try and thicken it as was too runny for my liking, otherwise enjoyed the flavour, all family said they liked it.
