Rigatoni with Quick Pork Ragu

Pork Ragu

  • 2 level tablespoons Olive Oil - EVOO is best
  • 1 onion large, Chopped roughly
  • 2 cloves garlic
  • 1/2 level teaspoon chilli flakes
  • 1 tablespoon thyme leaf, fresh
  • 400 grams pork mince, Fresh
  • 250 gram white wine
  • 400 grams can Chopped Tomatoes
  • 2 level tablespoons tomato paste
  • 300 grams chicken stock paste, Heated
  • pinch Nutmeg
  • chopped flat leaf italian parsley, To serve
  • Grated Parmesan Cheese, To serve
  • 500 grams Rigatoni pasta

Recipe's preparation

    Ragu
  1. Place oil in TM bowl and heat up to 100 degrees. Add onion and give 2 quick turbo bursts, scrape down and give 1 more if necessary. Cook on varoma for 5 minutes on reverse speed 2-3 until softened. Add Chilli flakes thyme and garlic and continue cooking another couple minutes. Add pork mince and cook 5-6 minutes on reverse varoma temp. Make sure all lumps are broken up. Pour in wine and cook again with mc off, until almost all has evaporated, Then add tomatoes and paste and cook another few minutes before adding hot stock and nutmeg. Adjust seasonings if required then simmer  temp 50-60 speed Gentle stir settingCounter-clockwise operationUntil thickened approx.20 minutes. Cook pasta following directions on pack in plenty of salted boiling water then drain. Divide between four bowls and spoon ragu over. Top with chopped parsley and Parmesan. Recipe adapted from Delicious magazine Italian issue. I Cooked the whole of this dish without the mc in place to allow evaporation. You could place the basket on lid if you like.

Tip

You could hide some extra veges by steaming lightly and blitzing them then add after the tomato step.
