Roast Chicken
- 1 Whole chicken, (1.6 - 1.8kg)
- 1/2 onion, sliced into chunks
- 1/2 lemon, sliced into chunks
- 1 stick Celery, cut into 3 pieces
- 1 clove garlic, halved
- 30 g honey
- 20 g olive oil
- 1 tsp cinnamon
- 1 tsp paprika
- Himalayan salt, to taste
- cracked pepper, to taste
- 1.5 litres water

Recipe's preparation
1. Rinse cavity of chicken and pat dry
2. Extend legs and wings of chicken to crack joints. Rubber band the legs together and fold wings behind chicken
3. Insert onion, lemon, celery and garlic into the cavity of the chicken
4. Place honey, olive oil, cinnamon, paprika, salt and pepper into Thermomix bowl and mix for 20 seconds / speed 5
5. Pierce the skin of the chicken and brush all over with the honey glaze.
6. Place the water into the Thermomix bowl. Place the chicken into the Varoma and place into position. Cook the chicken for 70 minutes / Varoma / speed 2
7. For a golden brown skin, place the chicken into an oven preheated to 180C and roast for a further 10 - 15 minutes. Alternatively, leave to rest in Varoma for 10 minutes

Tip
Use the reserved liquid to create a gravy.
I also cooked some sweet potato in the steam basket (I had to tip out some of the liquid) for the final 10 minutes of the chicken cooking in the Varoma and placed in the oven with the chicken for 10 - 15 minutes

What a great way to cook a whole chicken. My chicken was only small (1.4kg) so I reduced the cooking time by 5 mins. It looked great when it was finished in the varoma but I popped it in the air fryer on 200 degrees for 10mins to crisp up the skin a bit....perfect!
I wasn't a fan of the cinnamon flavour on the skin but understand that that's a personal preference.

I cooked this for the first time last night and it was beautiful! I used my own recipe for seasoning and then rubbed with a mix of butter and italian seasoning. As it was a 2kg bird, I cooked for a bit longer. I finished it off on the oven as for me, chicken has to be browned, crispy skin. The meat was so tender, moist and full of flavour. This is now the only way I will cook a roast chicken and so much better flavour than the bought ones.
Unfortunatley, the gravy I made was not that great, texture was good but I didn’t get the flavour right.

I follow it exactly and then do a gravy at the end (following notes in a comment below) I finish it off in the air fryer for 10 minutes to crispen up the skin.....loved by everyone! So delicious. I got two chicken from Costco so...
So delicious. I got two chicken from Costco so oven baked one and steamed the other. . I also finished the sauce off as a gravy by adding gravox and cooking on 90 degrees for about 8 minutes. Par-steamed the potatoes with the chicken and then finished them off in the oven with the other veggies.

Great recipe thanks! Loved by my family. They said "Amazing taste and so juicy". I cooked a 2.4kg chook, so added 20 mins cooking time and turned it over in the last 10 mins. Also did the rice option, thanks to comments with some frozen veg mixed in with 10 mins to go. Had some roast veges in the oven and finished off the chicken with them for the extra 15 mins. I made the gravy but the fam said it wasn't needed as chook was so lovely on it's own.

5 star for me. This time I chopped the onion herbs and whole lemon for 5 secs sp 7, added the rest of ingredients and mixed for 5 secs sp 3, then smeared all over skin and in the cavity. Sometimes I don't even finish off Iin oven. But always use the stock either to cook rice or root veges or gravy

Roast chicken - Absolutely
Roast chicken - Absolutely fabulous! So simple & so tasty! I was inspired by Tm5 & cooked rice in the simmer basket after putting the chicken into the oven to finish it off (I cooked the chicken for around 30 minutes in the oven & basted with butter as we like a really crispy skin). Like Tm5, I also added frozen veg to the rice part way through cooking. I didn't discard any of the water/ chicken juices before adding the rice, the rice & veg soaked up the juices & tasted sensational on their own. I finished off with traditional pan juice gravy (http://www.recipecommunity.com.au/sauces-dips-spreads-recipes/traditional-pan-juice-gravy/158176). I've got to say the chicken, rice, veg & gravy was the perfect combination! Five stars! Thanks for sharing!

Notes for me for next time: Made this tonight - 1.8kg chicken in varoma for 72mins - mixed the marinade in small bowl by hand - stuffed chicken with 1 garlic clove, 1 small onion, 1 halved lime, thyme sprigs - put quartered baby potatoes and carrot chunks in rice basket for last 10 minutes of cooking then placed these lightly sprayed with oil with chicken in 180degC oven for 10-15mins. Had 1L fluid left in TM bowl - added 70g plain flour and 3-4T TM stock and cooked at 90degC for 7mins speed 4 with some beans and brocoli in the varoma on top. Froze 3 lots of gravy leftovers.

This was my first time doing a whole chicken in the Varoma. My chicken was 2.1kg and I increased the cooking time to 85mins. I rested it for 10mins before putting in oven for 10mins and it was delicious and succulent. It made for a delicious Christmas Roast. I didn't do anything else in it this time but after reading comments may reduce liquid and add stuff in simmering basket. I found the marinade and stuffing beautiful and added great flavour. All my guests agreed it was great.

Thanks for posting this. Hubby was dubious but I convinced him when it turned out so tender. Next time we'll use a savoury glaze rather than sweet. I threw my potatoes in the liquid for about ten min to parboil before oiling and coating with salt and polenta. next time will halve the liquid before making into gravy. will do again as so easy.

Hi, I added heaps of cornflour, a bone broth cube, a tablespoon of TMX stock to the liquid in the TMX and it was still too bland. Next time I'll halve the liquid so I dont have to add so much cornflour and I might add two tablespoons of TMX stock and some salt. I had it on speed "Gentle stir setting" (spoon) and just let it stir with the MC off and checked it.

I found the sauce rub for the chicken didnt emulsify well & I only had a clumpy bit of honey I was trying to spread which wasnt very successful, so next time I might heat it a little so its runnier & spreads easier... first world problem though because Oh My Gosh... Soooo Good! Also it was so tidy to cook the entire meal & everything veggies, crispy chicken & gravy were all ready at the right time to just serve & eat and the kitchen didnt look like a bomb had gone off! Im well pleased! xx

This was my 1st attempt at cooking a whole chook and I am thrilled to bits with the result, unlike most others I was keen to taste the chicken without it being roasted, 20 mins or so before the final cooking time I added some rice in my simmering basket, (I had to throw out a bit of fluids), about 10 mins later I added some frozen peas to my rice, then after another 5 mins or so I added to the rice my left over veg from the night before, chicken resting, rice in thermoserver, I then thickened up the remaining liquid with some cornflour, my dish was just great, and the fact that the rice had soaked up all of the juices was just delicious, I am looking forward to my leftovers tomorrow

Turned out so tender, will now never roast a chicken again! I put cubed potatoes, pumpkin & sweet potato in the oven with 30 mins to go. Once i put the chicken in the oven I put broccoli and beans into the veroma and then used the water to make the gravy. Just perfect thanks.
