Shepherd's Pie (Cottage Pie, Potato Pie)

  • 500 grams Lamb, (lean - trim off fat if necessary)
  • 200 grams brown onion, (quartered)
  • 1 tablespoon oil, (vegetable or olive)
  • 2 celery stalks, (cut into 3cm chunks)
  • 2 carrots, (cut into 3cm chunks)
  • 1 zucchini, (cut into 3cm chunks)
  • 250 grams mushroom, field, (halved or quartered if large)
  • 50 grams water
  • 1 tablespoon Vegetable stock paste
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 2 bay leaves, (fresh or dried)
  • 1/2 teaspoon fresh thyme
  • 1/2 teaspoon fresh oregano
  • 1/2 teaspoon fresh basil
  • 1/2 teaspoon fresh rosemary
  • 2 teaspoons cornflour
  • 120 grams peas, (frozen or fresh)
  • 600 grams mashed potatoes

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Shepherd's Pie (Cottage Pie, Potato Pie)
  1. Preheat oven to 200 degrees, fan forced
    Add lamb to Closed lid
    Place TM Lid and MC onto Closed lid
    Mince 12 seconds, speed 6
    Transfer mince to a bowl and put aside until needed.
    Rinse and dry Closed lid
    Add onion to Closed lid
    Place TM Lid and MC onto Closed lid
    Chop 4 seconds, speed 6
    Scrape down sides of Closed lid
    Add oil to Closed lid
    Place TM Lid and MC onto Closed lid
    Saute 4 minutes, 120 degrees, Counter-clockwise operation speed 1
    Add celery, carrots, zucchini and mushrooms to Closed lid
    Place TM Lid and MC onto Closed lid
    Chop 8 seconds, speed 5
    Scrape down the sides of the bowl and push the vegetable mix to the sides of hte bowl to make a well for the mince.
    Add mince and water to Closed lid
    Place TM Lid and MC onto Closed lid
    Cook 4 mins, 100 degrees, Counter-clockwise operation speed 2
    Add vegetable stock paste, tomato paste, Worcestershire sauce, bay leaves, thyme, oregano, basil, rosemary, cornflour and peas to Closed lid
    Place TM Lid and MC onto Closed lid
    Cook 4 mins, 100 degrees, Counter-clockwise operation speed 1
    Transfer meat and vegetable mix to a casserole dish
    Top with mashed potato
    Put into the oven and cook for 15 - 20 minutes or until top is golden brown

Tip

You can substitute the lamb for beef.
You can use lamb or beef mince, just skip the step to mince the meat.
The vegetables are quite fine (except peas) so you can still see them but only just. If you prefer chunks of veges, chop the veges for a shorter time on a lower speed.
Substitute any of the vegetables for a vegetable you prefer such as corn, beans, broccoli, cauliflower.
If you don't have fresh herbs use 1/2 the quantity or each herb dried or use 1 teaspoon of mixed dried herbs.
You can add some cheddar cheese to the mash or sprinkle some on top.
