Thai Green Curry Chicken

  • 100g g green curry paste from cookido, pre made first
  • 600-700 g coconut milk, good quality , if like more sauce use close to 700g
  • 220 g bamboo shoots slices, can use canned
  • 600-700 g chicken breast in to slices
  • 30 g palm sugar, can use brown sugar to replace if no palm sugar
  • 2 tbsp fish sauce
  • 100 g zucchini slices, 1 small zucchini
  • 100 g carrot, 1 carrot
  • 200 g green beans, trimmed cut into short lenth
  • 20 g fresh thai basil leaves only, also for garnishing

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. seasoning chichken breast slices with salt and pepper for at least 10 minutes
  2. place green curry paste and 60g coconut millk into MC and cook 2 min/Varoma/speed 1
  3. add remaining 540g coconut milk,bamboo shoots, cook 6 min/100C/No counter-clockwise operationspeedGentle stir setting
  4. add chicken pieces ,cook 8 min/100c/No counter-clockwise operationspeed 1
  5. add palm sugar, fish sauce, all the vegtables, cook 3min/Varoma/No counter-clockwise operationspeed 1(must reserve blade )
  6. if prefer softer beans leave in bowl another 2 mintues with lid on ,then stir in thai basil leaves, pouring to a bowl, garnish with fresh basil leaves on top, enjoy

Tip

serve with coconut rice ,also can put pandan leaves in your rice for more aroma
