If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Add cheeses to bowl and chop 13 seconds / speed 5.5.
- Add butter, flour, milk, stock, mixed herbs and dried onion. Cook 7 minutes / 90 degrees / speed 4.
- Add chopped protein and cook "Counter-clockwise operation" 1 minute / 90 degrees / speed 3-4.

Tip
All protein should be cooked and diced first. If you want chicken or ham to have a similar texture to tuna, cook for 30 seconds / speed 4.
Gluten free flour and lactose free milk works well in this recipe. If it is too thin with gluten free flour, add 20 grams cornflour and cook for a further 1 minute / 90 degrees / speed 4.
If adding chicken, you could try replacing 100g milk with sour cream. If adding tuna, try a squeeze of added lemon juice.
